This is a family favorite, especially for my son Terry. In 1980 his new bride Kate asked for the recipe so she could make it often for him.
SLICE SQUASH (ZUCCHINI OR YELLOW OR BOTH)
COVER WITH WATER AND BOIL UNTIL TENDER
DRAIN SOUASH THOROUGHLY
MASH SOUASH
BLEND FOLLOWING INGREDIENTS:
3 CUPS MASHED SQUASH
1½ CUP SUGAR
1 CUP PLAIN FLOUR
4 OZ BUTTER
3 BEATEN EGGS
2 CUPS MILK
1 CUP FLAKE COCONUT (optional)
1 TABLE SPOON VANILLA
PLACE IN BAKING DISH AND BAKE AT 350 DEGREES FOR 1 HOUR
COOL
TOPPING: (optional)
4 OZ CREAM CHEESE ROOM TEMPERATURE
1/4 CUP CONFECTIONERY SUGAR
1 TEASPOON VANILLA
2 CUPS COOL WHIP
SPREAD TOPPING ON CUSTARD.
COVER WITH PLASTIC WRAP
KEEP REFRIGERATED
This sounds delicious. I'm going to try and make it. I have a squash casserole recipe also but it's not like this one. It doesn't have coconut in it but I love coconut. I will try it. Thanks for it
